If you grew up dipping animal crackers into that iconic blue tub of frosting, this recipe is about to hit differently. These Dunkaroo-inspired protein bites take everything nostalgic and delicious about that childhood snack and pack it into a high-protein, no-bake bite that actually works for you nutritionally. At 16 grams of protein per serving, they are the rare treat that earns a permanent spot in your weekly meal prep rotation.
The magic here is in how simple they are to pull together. Vanilla protein powder, almond butter and Greek yogurt form the base, with crushed graham cracker crumbs and a touch of confectioners’ sugar giving them that unmistakable flavor. A white chocolate shell and rainbow sprinkles take them from a healthy snack to something that genuinely looks and tastes like a dessert. Whether you are reaching for one post-workout, packing them as an afternoon snack or satisfying a late-night sweet tooth without derailing your goals, these bites deliver on every front.
Ingredients
- 1 cup vanilla protein powder
- 1/2 cup almond butter
- 1/2 cup whole milk Greek yogurt
- 1/4 cup finely crushed graham cracker crumbs (from about 6 crackers)
- 2 tablespoons confectioners’ sugar
- 1 teaspoon imitation or pure vanilla extract
- 1/4 teaspoon kosher salt
- 2 cups white chocolate chips
- 2 teaspoons refined coconut oil
- Rainbow sprinkles, for serving
Directions
- In a large bowl, combine protein powder, almond butter, yogurt, cracker crumbs, confectioners’ sugar, vanilla and salt.
- Using a small (about 2 tablespoons) cookie scoop, portion the dough and roll into balls. You should have 16 total. Arrange on a parchment-lined baking sheet. Freeze until chilled, about 20 minutes.
- Meanwhile, in a small microwave-safe bowl, microwave chips and oil in 10-second increments, stirring between each, until melted and smooth, about 30 seconds total.
- Working one at a time, drop bites into the chocolate and spoon chocolate over. Using a fork, lift out the ball and lightly shake to let excess chocolate drip off. Arrange on a clean parchment-lined baking sheet. Top with more sprinkles.
