Avocado toast has been done a thousand ways, but this version earns its place with a little extra texture and a lot more flavor. Smashed avocado gets a bright hit of lemon, then layered over golden, buttered toast with thin rounds of Persian cucumber, a generous pinch of za’atar and a scatter of tangy pickled red onions. A crumble of feta and a finishing touch of flaky salt round it out.
It’s the kind of recipe that takes barely any effort but still feels a little special, perfect for a quick breakfast, a light lunch, or something to set out when people are hanging around the kitchen.
Ingredients:
- 2 pieces thick-cut bakery-style rustic bread
- 1 tablespoon butter
- 1 avocado
- 2 teaspoons lemon juice
- 1 Persian cucumber, thinly sliced
- Za’atar seasoning
- Pickled red onions
- 1/4 cup feta crumbled
- Flaky salt and freshly cracked black pepper, to taste
Directions:
- Toast the bread until golden, then slather with a bit of great quality butter.
- Combine the avocado and lemon juice and smash together until chunky.
- Place equal amounts of the avocado on top of each piece of bread, followed by the sliced cucumbers, a hefty pinch of za’atar and thinly sliced pickled red onions. Finish with feta and salt and pepper.
